Chicken Elizabeth. I ordered it at a restaurant during a Christmas party for my husband’s company. I remember it like it was yesterday( I am a foodie…live to eat and all that).
It was not the coronation chicken Elizabeth with the sour cream and blue cheese. It was similar to chicken marsala, but with artichoke hearts and tomatoes served over angel hair pasta as if it weren’t heavenly enough. It truly was the best thing I ever ate, and to Steve’s dismay I went around the table and told everyone that they had to try it and experience the joy (the Pinot Grigio was flowing that night for sure). Everyone declined my offer, and Steve still had a job at the end of the evening, so there was something to be grateful for.
The restaurant is no longer in business, and try as I may, I have never been able to duplicate this wonderful deliciousness, and I cook with love. Oh, and I now limit the wine to a maximum of 2 glasses at dinner if any…
